WHOLE BEAN COFFEE
In the foothills of the Pico da Bandeira mountain we find Ninho de Aguia, the farm of our friend and long-time partner Clayton Barossa Monteiro, who took over the family farm, at first reluctantly, after focusing on a burgeoning surfing career. Upon first inspection, Ninho de Aguia likens a wild forest, it’s not until closer inspection that one sees the coffee plants nestled among the trees and vines. Clayton believes that this biodiversity produces more flavorful and exciting coffee, we couldn’t agree more!
Caparaó boasts steep slopes and cool temperatures, beneficial for coffee quality. Because of this, farms in the region look very different to farms further inland. Instead of large-scale producers and monoculture, we see small family farms and a focus on quality over quantity.
The incredible quality of coffee Clayton produces has earned him the reputation as one of the most respected farmers in Brazil. However, not only is he a top tier farmer, he also roasts coffee at a high level, keeping visitors to the region well caffeinated.
This lot is a natural processed Catucaí 785, a hybrid variety that produces notes of honey, jasmine & candied fruit.
